Casino Careers Online has a client seeking a candidate for a Director of Food And Beverage position.
The position description is as follows:
Major Responsibilities/Activities:
Overall responsibility for food and beverage operations in accordance with company standards and expectations.
Develop and produces all menu designs.
Reviews departmental financial reports, establishes and maintains fiscal budget/business plans, and initiates cost controls.
Promotes banquet sales, and special event planning and staffing.
Establishes and maintains policies and procedures for the food and beverage department.
Establishes guidelines for purchasing including a first-in, first-out inventory method.
Design and maintenance of food and beverage outlets.
Maintaining food preparation areas in accordance with food quality and safety standards.
Perform other duties as assigned.

Requirements:
Minimum Requirements:
Preference to qualified City Tribal Members.
Four (4) year college degree in hospitality or related field required.
May substitute experience on a year for year basis.
Eight (8) years experience in a Food and Beverage Management capacity in a high volume multiple outlet operation.
Demonstrated experience managing all phases of food and beverage operations. as well as knowledge of service standards; experience in a large facility with multiple outlets, high volume production operation such as a hotel, convention center or gaming facility.
Must have experience in fine dining, buffet/cook to order, deli type restaurants and banquet operations.
Experience in developing, implementing and evaluating programs, promotions and budgets.
Thorough knowledge of the laws and regulations governing Food and Beverage preparation and service.
Serv Safe and TAM certification (must obtain within 90 days of employment.
Excellent written and verbal communication skills including the ability to successfully communicate with multiple levels of management.
Must be able to read, write, speak and understand English.
Must be able to obtain and maintain a Gaming and Regulatory Commission primary gaming license.
Must have advanced Computer capabilities.
Knowledge of spreadsheet software and word processing software required with use of Microsoft products including Word, Excel, and Outlook.
Knowledge of point of service software systems required with use of Infogenesis software preferred.
Knowledge of food inventory software systems required with use of FoodTrak software preferred.
